9:30 a.m. - Gluten Free Diets: What’s all the hype about?
Roxanne Kingston, MS, RD – Nutrition Systems and the Purchasing Alliance

Objective: Participants will be able to understand the basic rationale for a gluten free diet, identify the foods that should be avoided, evaluate meals to for diet compliance, and explore ways to make this diet more palatable for the residents.

10:30 a.m. - Cross Utilize
Michael Duncan, Healthcare Specialist, Merchants Foodservice and graduate of Johnson & Wales Culinary School

Objective: Participants will be able to identify ways to lower food cost and eliminate waste by reusing products and to apply these techniques in their operations.
